Ingredients
- 2 cups Sweet potatoes peeled and cubed 1”
- 1 tablespoon olive oil
- 2 teaspoons Thyme chopped
- 1 Garlic clove minced
- ½ teaspoon Kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions

Preheat oven to 400 degrees.

In a large bowl, mix sweet potatoes, olive oil, thyme, garlic, salt and pepper.

Spread the potatoes onto a sheet pan lined with parchment paper. Make sure potatoes are not piled together but spread evenly.

Roast the potatoes for 30 - 40 minutes until tender and golden. Serve immediately.
