Shrimp with Tomatoes and Feta

I love creating recipes that pack a big flavor punch and this is one of them. Serve this dish with a simple green salad or with thin slices of crusty french bread. You can use fresh or frozen shrimp that's been thawed.

  • Kosher salt
  • Black pepper
  • Olive oil
  • Green onions
  • Garlic
  • Dried oregano
  • Cayenne Pepper
  • Crushed tomatoes
  • Feta cheese
  • Italian parsley

Ingredients

  • 1 lb shrimp peeled and deveined
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil divided
  • 2 tablespoons green onions sliced
  • 2 garlic cloves minced
  • 1 tablespoon dried oregano
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup crushed tomatoes
  • 4 ounces feta cheese crumbled
  • 2 tablespoons Italian parsley chopped

Instructions

  1. Pre-heat oven to 450 degrees. Season shrimp with salt and pepper, set aside. Heat 1 tablespoon of oil in a large saucepan over medium heat. Add shrimp and cook for 2 to 3 minutes. Transfer to a 8 x 8 inch baking dish.

  2. In the same saucepan over medium heat add the remaining oil. Sauté the green onion until soft. Sauté the green onion until soft. Add the garlic, oregano and cayenne and cook for 2 - 3 minutes. Add tomatoes and simmer for 5 minutes.

  3. Remove from heat and pour sauce over the shrimp. Sprinkle the cheese over shrimp and sauce. Place in oven for 2 minutes to warm cheese. Remove from oven and sprinkle parsley on top of cheese. Serve immediately.
