This Watermelon, Cucumber and Feta Salad is a refreshing, light and juicy summer side dish.
This is one of my go-to recipes for the warm summer months. It's light, juicy, refreshing and easy to make. You'll get to practice your knife skills with this recipe since there's a lot of chopping involved. The salad is made with crunchy cucumbers, sweet onions, fresh mint, cilantro, lime juice, and salty feta cheese.
I chose sweet Hawaiian onion to blend with the sweetness of the watermelon. The thin, even slices are made with one of my favorite kitchen tools, a mandoline.
The lime juice and salt draw out the water in the cucumber and watermelon. I removed the cucumber seeds, then diced it to avoid having any extra liquid. Bite size is important, so the diced watermelon and cucumbers are around the same size.
If you're bringing the salad for a summer gathering, wait until you arrive to mix everything together. Keep the salad ingredients separate, then add the lime vinaigrette and feta cheese right before serving. I promise you people will go back for seconds.
