For all of you bacon lovers out there, you'll enjoy these Bacon Wrapped Dates with Goat Cheese and Almonds.

Ingredients

  • 1   package of Medjool Dates pits removed slit cut into dates
  • 2 - 3  ounces  goat cheese slightly softened
  • 1/2  teaspoon  Fresh thyme
  • 16   raw whole almonds toasted
  • inch slices of bacon cut in half lengthwise
  • Cocktail toothpicks

Instructions

  1. Line a baking sheet with parchment paper and Preheat oven to 400 degrees.
  2. Slice a small slit into the dates and remove the pits.
  3. In a small bowl, combine the goat cheese and thyme. Mix well and set aside.
  4. Fill dates with the goat cheese mixture. Insert a roasted almond into each date.
  5. Wrap each date with a slice of bacon then place on a sheet pan lined with parchment paper. Make sure each date is placed seam-side down onto the pan.
  6. Bake for 15 - 20 minutes or until bacon is crisp and browned.
  7. Transfer to a platter and insert a toothpick into each date. Serve warm or at room temperature.
