Ingredients

  • 2 tablespoons olive oil divided
  • 1 medium onion finely chopped
  • 2 carrots diced
  • 2 celery stalks thinly sliced
  • 1 turnip peeled and diced
  • 1 pound boneless chicken breasts cut into 1” cubes
  • 3 garlic cloves minced
  • 4 Cups Chicken Bone Broth
  • 2 cups water
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1 bay leaf
  • 1 large zucchini diced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Italian parsley
  • Kosher salt
  • Freshly ground black pepper

Recipe Notes

Remember to remove the bay leaf before serving.
