Preheat oven to 375 degrees. Prepare a baking sheet with parchment paper.

In a large skillet over medium-high heat add 2 tablespoons of olive oil.

Add onion and garlic. Cook for 1 minute. Add crab, bread crumbs, parsley, tarragon, paprika, salt and pepper. Combine well. Remove from heat and add egg. Transfer to a bowl and mix well.

Melt the butter in a microwave or on the stove top. Brush the inside and outside of mushroom caps.

Stuff each mushroom cap using a spoon and place on baking prepared baking sheet.

Brush the top of each mushroom with melted butter and sprinkle with Parmesan cheese. Bake for 15 minutes or until mushrooms are browned. Serve immediately.
