Turkey Vegetable Burger

Ingredients

  • 1/4 cup red onion finely diced
  • 1 small zucchini finely grated
  • 1 carrot finely grated
  • 1 garlic clove minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Kosher salt divided
  • 1/2 teaspoon ground black pepper
  • 3/4 pound ground white turkey meat
  • 3/4 pound ground dark turkey meat
  • 1 tablespoon avocado oil
  • Hamburger Buns or Brioche Buns

Instructions

  1. Prepare a baking sheet with parchment paper. Set aside.
  2. In a large bowl add the vegetable mixture. Mix in the oregano, paprika, Worchestshire sauce, salt and pepper. Add the ground turkey to the vegetables and mix well.
  3. Form the turkey mixture into 6 patties. Arrange patties onto the prepared baking sheet. Lightly press the center of each patty with your thumb to make a small indentation. Cover the patties and chill for 1 hour.
  4. Heat a grill pan or large cast iron skillet over medium-high heat. Brush the pan or skillet with avocado oil. Grill the turkey burgers for 5 - 7 minutes each side until they are fully cooked (160 degrees in a safe temperature).
  5. Serve the turkey burgers on buns with your favorite condiments like ketchup, mustard, sliced tomatoes and lettuce. Or ditch the bun and serve it with a simple green salad.
