Ingredients

  • cups  Sweet potatoes peeled and cubed 1”
  • tablespoon  olive oil
  • teaspoons  Thyme chopped
  • 1   Garlic clove minced
  • ½  teaspoon  Kosher salt
  • ¼  teaspoon  freshly ground black pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix sweet potatoes, olive oil, thyme, garlic, salt and pepper.
  3. Spread the potatoes onto a sheet pan lined with parchment paper. Make sure potatoes are not piled together but spread evenly.
  4. Roast the potatoes for 30 - 40 minutes until tender and golden. Serve immediately.
