Chop Salads are one of my favorites! One of the best things about these salads is that you can tailor them to fit your personal tastes. This chop salad was inspired by one of my favorites from a local cafe. You can enjoy it with some diced grilled chicken breast or, my favorite way, with diced Italian salami. Leave out the protein and enjoy the salad as a vegan option. As long as your chopping skills are up to par, this salad takes very little time to put together. Adding some diced pepperoncinis adds a little heat and texture, but leave them out if they are not your thing. Finally, don’t forget to top off the salad with just a little grated parmesan cheese to add a little extra depth.
